
One Pan Shakshuka (Eggs Poached in Tomato Sauce)
This hearty, flavorful dish is perfect for breakfast, brunch, or a light dinner. Serve with warm bread or pita for scooping up the savory sauce, making it a wholesome, comforting, and visually stunning meal.

- Prepare all your vegetables, about 4 cups, and set aside. I love the convenience of pre-chopped onion and garlic.
- Spray the pan with olive oil on medium heat.
- Sauté the leeks and onion until fragrant, then add all the remaining vegetables and ½ cup of water, and cook until soft.
- Add tomato sauce, paprika, salt, and pepper to taste
- Add the remaining ½ – 1 cup of water and simmer for 5 minutes.
- Crack your eggs on top and sprinkle with your favourite cheese.
- Cover the lid and let it poach until the eggs are cooked to your desire. I like mine just turning white, about 2 minutes.
- Serve it from the pan with toasted sourdough or pita bread.
