Swiss Wings

Each wing is simmered until glossy and flavorful, absorbing the perfect balance of soy sauce, rock sugar, ginger, garlic, and Shaoxing wine

Ingredients
  

  • 1 lb Frozen chicken wings or chicken thighs or breasts
Swiss Sauce Ingredients:
  • 3 slices of ginger
  • 1 Spring onion cut into sections
  • 1 Cinnamon bark
  • 2 Aniseed
  • 4 Cloves
  • cup of rock sugar
  • ½ cup light soy sauce
  • ½ cup dark soy sauce
  • ½ cup of water
  • 1 tablespoon Sichuan pepper corn optional

Equipment

  • Wok / Deep Skillet
  • Tongs
  • Ladle / Wooden Spoon
  • Pot / Saucepan
  • Serving Plate / Bowl
  • Pastry brush

Instructions
 

  1. Preheat oven at 185C.
  2. Bake frozen wings for 30-45 minutes until just cooked. You can also boil it if you prefer.
  3. While waiting for the wings, mix all Swiss sauce ingredients in a pot.
  4. Boil and reduce until sugar has melted and sauce slightly thickened.
  5. Remove Wings from oven and dip them directly into the sauce and cook for 5 minutes.
  6. Remove from Sauce and Serve hot.
  7. Save sauce in a jar and refrigerate for later use for a second batch of wings or use as a marinade for other meats (Lamb or Pork).
