Fat-Free Cottage Cheese

Rich in protein and calcium, yet low in calories, fat-free cottage cheese is a favorite among fitness enthusiasts, weight-watchers, and clean eaters seeking a balanced diet.

Ingredients
  

  • 1 Liter non-fat milk
  • 3.5 tablespoons vinegar
  • 1 teaspoon of salt or to your taste
  • makes 1.5 cup of cottage cheese

Equipment

  • Saucepan
  • Thermometer
  • Cheesecloth / Strainer
  • Mixing Bowl
  • Spoon / Spatula

Instructions
 

  1. Pour non-fat milk in a heavy pot and bring to a simmer at 87C.
  2. Turn off heat and add vinegar, quick stir and let it curd.
  3. Prepare a fine sift or a strainer lined with a cheese cloth.
  4. Pour mixture into strainer and gently press with to remove the whey.
  5. Rinse with cold drinking water and press to remove excess liquid until desirable dryness. I like mine just moist enough like a spread.
  6. Press into a firm block to make harder cheese like feta.
  7. Mix with salt and place in an air tight container and refrigerate over night.
  8. Add a dash of milk to add creamy texture or enjoy as is.
  9. Spread on toast or add honey, vanilla or cocoa powder for a sweet treat.
