HK Style Satay Beef Balls

Perfect as a snack, appetizer, or part of a dim sum platter, these beef balls capture the essence of Hong Kong flavors with a modern, indulgent twist.

Ingredients
  

  • 350 g Sliced Beef or beef balls
  • Beef marinade: ( If you want fresh beef use this marinade)
  • 1/2 teaspoon baking soda
  • 1 teaspoon soy sauce
  • 1 teaspoon Chinese wine
  • 1 teaspoon chicken powder optional
  • 1/2 cup of water
  • Satay sauce:
  • 1/2 small red onion chopped
  • 2 cloves of garlic chopped
  • 2 tablespoons Chu Hou sauce
  • 2 tablespoons HK curry powder
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon oyster sauce
  • 1 tablespoon of honey or splenda
  • 1 cup of water

  • Knife & Cutting Board
  • Skillet / Wok
  • Steamer / Saucepan
  • Measuring Cups & Spoons
  • Tongs / Slotted Spoon
  • Serving Plate / Bowl

Instructions
 

  1. Mix the beef with all the beef marinade ingredients, except for the water.
  2. Add water slowly, mix until the beef has absorbed the water, and repeat. Let it rest for 15 minutes.
  3. To make the sauce, sauté the onions and garlic until they are golden and soft.
  4. Mix all remaining sauce ingredients and pour into the onion mixture.
  5. Cook until thickened, then add more water to achieve your desired thickness, and set aside.
  6. In a separate pan, sauté the beef until golden brown over high heat, ensuring no excess liquid is released from the meat.
  7. Add satay sauce to the beef (or add beef balls to the sauce) and stir until well combined.
  8. For meatballs, cook for 10 minutes at a low simmer.
  9. Cook udon or Konjac noodles and make a clear broth with a 1:1 ratio of chicken stock and water.
  10. Dont forget to add some green vegetables for extra texture and crunch!
