One Pan Shakshuka (Eggs Poached in Tomato Sauce)

This hearty, flavorful dish is perfect for breakfast, brunch, or a light dinner. Serve with warm bread or pita for scooping up the savory sauce, making it a wholesome, comforting, and visually stunning meal.

Ingredients
  

  • ½ cup chopped leeks
  • ½ cup chopped red onion
  • 6 mushrooms cut in 4s
  • 8 cherry tomatoes or 1 large tomato
  • 1 cup of tomato sauce
  • 1 cup of water
  • ½ cup of low fat cottage cheese can use any cheese you like
  • 4 eggs
  • 1 teaspoon Paprika Optional
  • ½ teaspoon chilli flakes Optional
To Dip with:
  • 2 slice of Sour Dough
  • 1 large Pita Bread

Equipment

  • Skillet / Frying Pan / Sauté Pan –
  • Mixing Bowls
  • Knife & Cutting Board
  • Spatula or Wooden Spoon
  • Lid
  • Serving Plate / Pan

Instructions
 

  1. Prepare all your vegetables, about 4 cups, and set aside. I love the convenience of pre-chopped onion and garlic.
  2. Spray the pan with olive oil on medium heat.
  3. Sauté the leeks and onion until fragrant, then add all the remaining vegetables and ½ cup of water, and cook until soft.
  4. Add tomato sauce, paprika, salt, and pepper to taste
  5. Add the remaining ½ – 1 cup of water and simmer for 5 minutes.
  6. Crack your eggs on top and sprinkle with your favourite cheese.
  7. Cover the lid and let it poach until the eggs are cooked to your desire. I like mine just turning white, about 2 minutes.
  8. Serve it from the pan with toasted sourdough or pita bread.
