Tofu Noodles 高蛋白豆腐面

Tofu Noodles (Gluten-Free Option) is a light, protein-rich dish made with soft tofu ribbons or tofu-based noodles tossed in a savory, aromatic sauce

Ingredients
  

Noodles:
  • 150 g Bread flour or Glutinous rice flour Gluten-free option
  • 225 g firm tofu
  • 2 g salt
Simple Dressing:
  • 1 tablespoon soy sauce
  • 1-2 tablespoons Chinese black vinegar
  • 1 teaspoon of maple syrup honey or sugar
  • 1 teaspoon of chili oil or sesame oil
  • 1 teaspoon of crispy garlic or fresh Optional
  • 1 teaspoon of fresh ginger optional
  • 1 tablespoon of cilantro or spring onion Optional

Equipment

  • Cutting board
  • Sharp knife
  • Mixing Bowl
  • Sauce bowl or small prep bowl
  • Non-stick pan or wok (if stir-frying)
  • Strainer (if rinsing tofu noodles)
  • Chopsticks or tongs
  • Serving Bowl
  • Measuring spoons

Instructions
 

  1. If you are gluten-free, use glutinous rice for a mochi-like texture. Bread flour will give you an al dente texture.
  2. Press the tofu dry and remove any excess water.
  3. In a blender, add the tofu, salt, and ½ of the flour, and blend until a dough forms. Add more flour as needed until the dough is clean to the touch without sticking. (If you buy extra firm tofu, start with less flour and gradually increase until the consistency is right)
  4. On a dry and clean surface, knead with a bit of extra flour and let it rest for 20 minutes. This will help the gluten to develop (especially the bread flour)
  5. Cut into shapes of your desire. You can make them into little balls, long noodles, or cut them directly into boiling water.
  6. Prepare a pot of boiling water with a dash of salt, and cut small bits of noodle paste into the boiling water.
  7. Remove noodles from the water when they float to the surface.
  8. Let it cool for stir-fry noodles or add your favorite dressing for a cold mixed noodle salad.
