Pineapple Bun Cheesy French Toast

Perfect for breakfast, brunch, or dessert, it’s a modern Hong Kong-style indulgence that’s equal parts nostalgic and irresistible.

Ingredients
  

  • Cookie Crust:
  • 50 g butter soften
  • 50 g sugar
  • 90 g flour
  • 1 egg yolk
  • ½ teaspoons vanilla extract
  • Teaspoon baking soda
  • teaspoon baking powder
  • 2 eggs scrambled
  • 4 piece of milk toast
  • 8 slices of low fat craft cheese square

Equipment

  • Mixing Bowl
  • Frying Pan / Skillet
  • Whisk / Fork
  • Spatula / Tongs
  • Bread Knife / Cutting Board
  • Measuring Cups & Spoons

Instructions
 

  1. In a mixing bowl, add butter and sugar and mix until combined.
  2. Add remaining ingredients and mix until they form a dough.
  3. Wrap dough in plastic wrap, form into a tube, and refrigerate until firm.
  4. Cut the dough into four equal circles. Place between two sheets of plastic wrap and roll into a round big enough to cover your milk toast,
  5. In a plate, whisk two eggs and dip the toast on both sides into the egg.
  6. Add two slices of low-fat mozzarella cheese squares on top.
  7. Cover cheese with cookie dough and brush extra egg wash on top of the dough.
  8. Bake in an Airfryer for 15 minutes at 190 °C until golden brown.
  9. Let the toast sit for 5 minutes until the cookie crust is slightly cooled and crispy.
  10. Cut in half or little toasty and enjoy!
