- In a mixing bowl, add butter and sugar and mix until combined.
- Add remaining ingredients and mix until they form a dough.
- Wrap dough in plastic wrap, form into a tube, and refrigerate until firm.
- Cut the dough into four equal circles. Place between two sheets of plastic wrap and roll into a round big enough to cover your milk toast,
- In a plate, whisk two eggs and dip the toast on both sides into the egg.
- Add two slices of low-fat mozzarella cheese squares on top.
- Cover cheese with cookie dough and brush extra egg wash on top of the dough.
- Bake in an Airfryer for 15 minutes at 190 °C until golden brown.
- Let the toast sit for 5 minutes until the cookie crust is slightly cooled and crispy.
- Cut in half or little toasty and enjoy!
