Pre-heat the oven to 185 °C.
In a mixing bowl, combine all the ingredients for the apple mixture.
In a baking dish, pour the apple mixture in with all the liquid.
Cover and bake in the oven until the apple is soft and the sauce is bubbling. (about 45mins)
Remove from the oven and let it cool completely at room temperature.
In a mixing bowl, combine the butter and sugar until a soft paste forms.
Add the remaining ingredients and mix until a non-sticky dough forms.
Place the dough between sheets of plastic wrap, flatten it to about 0.5 cm thick, and refrigerate it until dessert time.
After dinner, preheat the oven to broil at 190 °C.
Remove the dough from the fridge, place it over the cooled baked apple, and lightly score the top to resemble the classic pineapple bun.
Brush with egg white and bake until golden brown, and serve hot!
