- Cut Firm tofu into 1-inch cubes.
- Mix all seasonings in a large mixing bowl.
- Toss firm tofu into the seasoning to coat all sides.
- Place firm tofu on a sheet pan or air fryer basket and spray generously with olive or avocado oil.
- Bake for 20 minutes or until golden and crispy.
- Meanwhile, chop pepper mix into fine dice.
- In medium-low heat, sauté onion, garlic, and ginger first until fragrant and soften with 2 tablespoons of olive or avocado oil.
- Add remaining ingredients and sauté until softened and season with salt and pepper to taste.
- Toss and mix crispy tofu into the pepper mixture and sauté for 3 minutes and serve immediately.
