港式焗蘋果菠蘿批 HK Style Apple crumble with cookie crust

A comforting Hong Kong–style apple crumble made with tender spiced apples and naturally sweet dates, baked to perfection.Finished with a buttery, golden cookie crust, it’s the perfect balance of warmth, crunch, and fruity goodness.

Ingredients
  

Apple mixture:
  • 4 Granny Smith apples peeled and sliced
  • 10 dried dates chopped
  • 1 juice of a lemon
  • 3 tablespoons of honey
  • 1/4 teaspoon of cinnamon
  • teaspoon ginger powder
  • 2 cloves whole
  • teaspoon cardamom optional
  • teaspoon nutmeg optional
  • 3 tablespoons of corn starch
Cookie crust recipe:
  • 50 g softened butter
  • 50 g sugar
  • 90 g flour
  • 1 egg yolk leave egg white for eggwash
  • ½ teaspoons vanilla extract
  • Teaspoon baking soda
  • teaspoon baking powder

Equipment

  • Mixing Bowls
  • Knife & chopping board
  • Measuring Cups & Spoons
  • Baking dish / oven-safe tray
  • Oven
  • Spatula or spoon
  • Peeler
  • Whisk

Instructions
 

  1. Pre-heat the oven to 185 °C.
  2. In a mixing bowl, combine all the ingredients for the apple mixture.
  3. In a baking dish, pour the apple mixture in with all the liquid.
  4. Cover and bake in the oven until the apple is soft and the sauce is bubbling. (about 45mins)
  5. Remove from the oven and let it cool completely at room temperature.
  6. In a mixing bowl, combine the butter and sugar until a soft paste forms.
  7. Add the remaining ingredients and mix until a non-sticky dough forms.
  8. Place the dough between sheets of plastic wrap, flatten it to about 0.5 cm thick, and refrigerate it until dessert time.
  9. After dinner, preheat the oven to broil at 190 °C.
  10. Remove the dough from the fridge, place it over the cooled baked apple, and lightly score the top to resemble the classic pineapple bun.
  11. Brush with egg white and bake until golden brown, and serve hot!
